He’s so pissed right here. Gil may not have intended to upset her, but he has, and Harry is ready to gut him. That chin thrust, the raised eyebrows, narrowed eyes pretty much screams ‘What the fuck is wrong with you!?”
This gif also shows how well she knows him. She never once looks at him, just reaches over and touches his arm, no words needed to tell him ‘He’s an idiot but you can’t kill him.’ In fact, she does it before he even moves toward Gil.
The next time you see his protective streak is during ‘What’s My Name?’. Uma knocks the pirate’s hat off his head and the guy goes full intimidation mode. Looms over her, chest puffed out, steps into her space. Uma isn’t worried, she goes for the guy’s sword, ready to cut him down herself. But in the background, you can watch the smile fall off Harry’s face.

This intimidation of the other pirate isn’t necessary, Uma has it under control, but Harry can’t seem to help himself.
At the end of the song Gil steps in it again, and Harry seems so damned happy that Uma asks him to protect her this time. It’s a moment of eye contact and a jerk of her head, but Harry grins and slides right between Uma and Gil.
Now let’s talk about that deleted scene. He’s still protecting her, though not from a physical threat. Harry can see how upset she is by the conversation with Ben, but there’s nothing there to fight, nothing he can sink his hook into and shred. So he does the only other thing he can do, and that’s kissing her hand. Remind her that he’s looking out for her.

The last bit is during “It’s Goin’ Down”. Harry spends most of that show down over there intimidating Ben. Right up till the moment that Mal steps closer than the length of the gangplank from Uma. As soon as she does Harry’s entire focus is on her. He points his hook at her, and the expression on his face is one of gleeful vengeance. He laughs a little and rushes over to Uma’s side. Again, it’s a moment of unnecessary intimidation, because Uma’s got it. She doesn’t need him to protect her. Even though all of his words are about hurting Ben, Harry is intimidating Mal. He gets into her space and brushes her hair with his weapon. He’s using everything but physical force to make her back up, to get away from Uma. He doesn’t go back to Ben until Jay pulls Mal away from Uma.
Harry knows that Uma can protect herself, but he’s claimed the privilege of doing it for her. Of using the fear people have of him and his father as a weapon to protect her. On an isle where everyone is out for themselves, that protection means a great deal more than it would in Auradon, because it’s so far from the norm.
His need to protect her is enough to tell me just how much he loves her, even if I hadn’t been convinced of that the moment he took off his hat and said her name like a lover.
